Okay, I've been spoiled.  Google Mail has been my online mail savior for the better part of two years now.  And they have a feature you can't seem to implement.  If I reply to someone, compose a lengthy email, and then decide that I really need to "reply all" I have to cut-n-paste all those extra recipients, or cut-n-paste my message into another email. 

 

Google Mail gives me a menu button to convert my message - reply, reply all, forward.  Microsoft, please give me this option.  This one little feature will probably not save me a lot of time (come on, how hard is cut and paste), but it is an obvious improvement and streamlines workflow - making email better to use.
